With reference to my dictionary
we can use katakana to write
常用漢字表の範囲内で書けない動物や植物の名前
(The reason is the grammar...)
In addition
although ウサギ have the kanji 兎
but 兎 is belong to a class of kanji that are seldom used
However, I found that Japanese also use hinagana to write names of animals and plants
(as well as onomatopoeic words)
The reason is that using hinagana may be more convenient
Besides, the particles (such as を、へ、は) must written in hinagana
Obviously, they can also written in katakana for some specific purpose...
To conclude
may be the usage and grammar of Japanese is a bit different XD
